Johnson Chili Nation Prize winning Chili Recipe

 

1)      Cover bottom of Dutch oven or Cast-iron pot with Extra Virgin Olive Oil over low heat     

2)      Add 2 cups of diced onions and ¼ cup of diced peppers (jalapeño, serrano and/or habanero)

3)      Cover and simmer until the mix is translucent

4)      Add 1 pound of Impossible meat or ground beef and heat until brown in the onion mix

5)      Add more oil if necessary

6)      Add 2 cups of Baby Bella mushrooms after removing the stems

7)      Add 2-3 dashes of Worcestershire sauce and salt and pepper to taste

8)      Add the “Johnson Chili Nation” chili mix packet and stir until dark mixture over low heat

9)      Add 1 ½ cup of (Vegetable stock OR soaked and strain some Clove juice OR dark beer)

10)   Add ¼ cup of your favorite dark soda or Root Beer

11)   Stir the mix thoroughly over medium heat

12)   Add 4 teaspoons of tomato paste

13)   Add 2 cups of tomato sauce and 1 cup of strained diced tomatoes

14)   Stir the mix thoroughly

15)   Add 1 can of Red Kidney beans only (STRAIN THE JUICE FROM THE BEANS FIRST!)

16)   Add 1 can of white cannellini beans only (STRAIN THE JUICE FROM THE BEANS FIRST!)

17)   Stir and simmer covered on stove for 15-30 minutes.  If you’re using Dutch oven you can simmer in the oven at 225 degrees for even more flavor.
